Meet the Reason Norman Butter Exists

Her tag number is 1042. She was standing in a coastal Norman field at golden hour, sand dunes at her back, looking at me with the calm indifference of a creature who knows her value and has nothing to prove.

She is the reason the butter exists.

If you have never had proper Norman butter — Isigny, Échiré, the real thing — you have not fully understood what butter is capable of. It is AOC-protected, which means it can only come from here, from this specific land, from cows that graze on the salt-kissed coastal grass of the Normandy bocage. It is deep yellow, almost gold. Rich in a way that stops you mid-bite.

I spread it on sourdough. With jam. Or Radishes. Or recently, with Broiled Sardines.

I thought about 1042 and her pals.

The Land Does the Work

What makes Norman dairy extraordinary isn’t a recipe. It’s the terroir — the same concept the French apply to wine, applied here to grass and milk and cream. The coastal air, the mineral-rich pastures, the particular character of this corner of France. The cows eat it, the milk carries it, and what arrives on your table is the direct output of a very specific place.

Think about what this region produces before 8AM: eggs from chickens with no concept of personal space, butter from cows who pose for photos without asking, sourdough from bakers who’ve been doing this for generations. And somewhere nearby, the Channel catching the early light.

I have eaten breakfast in a lot of places, and enjoyed most.
